Our mission is to bring the FRESHEST and CLEANEST farm raised clams directly from Cedar Key to Central Florida restaurants. We harvest weekly, deliver by the next day, and are able to bring a 2nd delivery should our chefs run low before the next harvest. We purge them in their natural waters too - which eliminates the grit but keeps their bellies full of flavor! Our clams have been planted for year round availability and we have a network of small farms to source from for whenever there is a gap between crops.
We can fill ANY size order for 100 count bags of roughly middleneck size (1- 1-1/8" at the hinge, 8.5-9.5 lbs) and limited orders for littler-necks (~7/8", 5.5 lbs) and topnecks. We throw in 6% extra to cover loss during processing and shipping. Also, we do not require minimum orders or charge delivery fees for most parts of Central Florida.
If you've ever considered adding Florida shellfish to your menu, now is the time to give clams a chance!! It will be hard to get them any fresher, and your farmer in most cases will be personally delivering them. We would love to bring you a sample and chat for a bit about what it is that we actually do, and strive to be able to do for the future.
